       @mike @BillSaysThis @anon_opin In my region kale is a typical (and beloved) hearty winter dish, cooked with onions and lard, then served with potatoes and smoked pork (belly, neck, sausages), and/or "Pinkel", which is a sausage from lard, grits, and some pork. Some even cook this all together. Ah, and mustard on the side. We *love* it.

       @jyrgenn @BillSaysThis @anon_opin @mike in my region we use Mettenden, which is a different smoked sausage (no grits), and do put it into one pot eventually (even the mustard). Lots and lots of nutmeg, too! It’s not as "we, all of us, love it" status here but still a hearty winter and early spring thing.Have a photo of 5-6 ℓ of this goodness, I also added garlic in this batch.

Good chunk of Luxembourg and small parts of Belgium and an even tinier corner of France, if you want the full extent, but that’s harder to see on maps.Edit: oh, that was a reply to the other subthread.        @jyrgenn @mike @BillSaysThis @anon_opin though the restaurant variety over here is, not very good, to say. Often separate and too focusses on the meat. The ready meals in the supermarket fridge section are sometimes worse, sometimes better, but you really have to make a large portion for yourself and family/friends.

       @mirabilos @mike @anon_opin @BillSaysThis Correct. It is between the Lower Saxony / East Westphalia border, where my wife comes from, and all of Schleswig-Holstein. In the latter, you even have a variant where the potatoes are not boiled, but fried on small pieces with a bit of sugar. I'm getting hungry now.

       @mirabilos @mike @anon_opin @BillSaysThis My wife and I had some kale last week. In her home region there is a butcher who not only produces great meat cuts and products, but also a few other things, including ready-cooked kale, and he still had some. Very good stuff, you only have to heat it up. And add, of course, potatoes and/or whatever meat or sausages you want to have with it. That was probably the last kale we had before autumn.
