@mjdigspigs If it is brand new, start with washing it real good, because common sense.Then it has to dry completely. Best is to heat it on the stove.Then apply oil and wipe of excess oil, not olive oil though, has to be an oil that can stand high temperatures.Then heat tour skillet for an hour in the oven. If you make smoke, the heat's too high.There is nothing magic about seasoning cast iron. I use dish detergent all the time. It takes about 3 minutes to re-season, almost all of which is waiting for the pan to heat up.The idea is to heat the iron so that the iron crystals expand and spread slightly and the oil can penetrate the surface. 300F (130C) is more than sufficient. I just put it on the burner on medium heat until it gets the dull grey appearance of cast iron. Then I pull it from the heat, pour in a couple of tablespoons of whatever fat I have handy, and wipe it all over the inside with a folded up paper towel. If it all gets absorbed, sometimes I'll add some more.Any oil or fat will do, lard, tallow, olive oil, whatever. Grapeseed oil has a high smoking point, and very little flavor, so it's popular.Normally though, just using the pan to fry things is sufficient to keep it seasoned, and plain water is sufficient to clean it.

@multiversal_gangstalker I used to have a ceramic pan. Well still have 2 of them.But after I realized how amazingly good a cast Iron or a stainless is, as long as you remember to heat the fat really hot before cooking, all other pans are second.I can fry raw potato, boiled potato, no problems, nothing sticks.Normal cast iron is the best non stick pan I ever had. @Kalogerosstilitis2RevengeoftheJunta @suquili

@Kalogerosstilitis2RevengeoftheJunta Well if I ever mess up, I just put a few table spoon of water in it and put it back on the stove and after a minute or so, it all comes of, I clean the pan and it is like new again. It literally only take a minute to clean it, even after you make a mess.But you can never use dish-soap in it.Only hot water.Each time you use soap in it, you will have to burn the pan again.@multiversal_gangstalker @suquili

He's not buying steel or cast iron. We all know tgis. Even i that uses cast iron extensively (stainless before that) still on occasion use a non stick one. I shouldn't but here we are.

Agreed. I recently got a cast iron for meats (had stainless before for that) and now i even do eggs in it not just steak . Needs the appropriate care but its not as hard as i thought it would be. But im older, i have time and i eat a lot of steak. The good stuff. Most people will stop cooking if they have to use stainless and cast iron. Especially stainless. Fuck up once to preheat properly and the sticky mess drives most people away.

I have a cast iron skillet from my grandmother. It's been in the family for quite a few years. I would take it over any new age cast irons. It's heavy, durable and could bloody someone if they angered you.

@animegothicgirl88 To be fair, it took me a while to get the new cast iron pan in good shape.I never had this problem with the old ones.But I always thought it was because they had years of seasoning and only got better and better over time.Anyhow, even m y new pan is good. Same as the stainless. @AsukaNeko How can any procedure be easier than just wiping the pan with some paper. Or even easier, do nothing at all.Worst case scenario, put some water in it and heat it up and then just rinse it. And let it dry by the heat or air or paper, doesn't really matter.I think a lot of people would be surprised if they tried to do it the easy way. @Kalogerosstilitis2RevengeoftheJunta @suquili

@Kalogerosstilitis2RevengeoftheJunta Yeah you can use soap, but then you have to clean it really good and then after you rubb it with oil you have to heat it until it up real good afterwords.It is not as if you will ruin the pan.Just needs a quick seasoning.When I heat it with water, I just scrape it with the stainless spatula. It all comes of real easy. And then I rinse it with water.But when it is dry , I do that thing with oil and paper, oil it and wipe it good.@AsukaNeko @suquili

I recently bought a lodge cast iron pan. Came pre seasoned. Every time i cook i use the scrubs/scrapes it came with and hot water to clean it. If need be you can definitely use soap, don't worry about it. But then you have to rinse with hot water and dry it. I mean. Bone dry. Thats all normal, pretty much like any other pan. But then you have to rub it while its hot from the hot water with oil really well. Then rub it with paper towels until the towels aren't oily. It seminreseasons it. Every few months do a full seasoning (easy but time consuming). So basically it only has 1 extra step from a regular pan usually.

Rubbing it with oil while it is hot will not restore the seasoning.It will just make it look good.This might explain why you have to scrub and scrape it each time. You should only have to do that if you accidentally burn something to a crisp.All I do is just wipe it with some paper if it start to be too much grease and spices in it. Ill try it from next time. Btw nothing sticks on it. Not even eggs. Until now at least. I only have used hot water and the included rubber spatula things to get stuff off. Ive never used soap my self but i saw plenty people saying its ok if you oil it back.
