Make your own gravy. It will be much better.All you need is some chicken stock, wine, and a little #GlutenFree flour.It's a doddle. And you just do it while the bird is resting.@Ricardus

@iamdavidobrien I make it all the time. It's just that the last time I cooked a bird there weren't enough juices to add to the gravy.

Ah, well, couple of suggestions that might be helpful. 1. Judicious use of foil to moderate evaporation 2. Every 30 mins or so, just scoop any useful looking stuff out of the tray with a ladle or spoonBonne chance!@Ricardus

@iamdavidobrien Thanks!This year I cooked the smallest "turkey" I could find, which was a cut of breast.But we'll do it again with a bigger bird come Xmas.
