Now here is a proper appliance. A real contraption. This is a kettle that you hook up to a jug of water (like the kind used at office water coolers) and the kettle autofills from the bottom with water and boils it for your tea. Then you have a little dishwasher designed to wash teacups only. (so not very powerful, that's how they pull it off) so your cups are warm and clean after each tea session.The Jetson's stuff right here. Sadly it only comes in 220v models. So not for US markets.

@futurebirdAn isolating transformer would solve that problem, really. As long as the device doesn't have a dependency on the 50 cycles per second power standard of Europe, it should be fine.

Given that most US homes don't even have a kettle it's kind of cruel to show the advanced tea technology...I go over to people's houses and they boil tea water on the stove in a saucepan... and I try to find it quaint... don't be a little priss... but inside I'm crying. (I refuse to discuss the concept of microwaving water... I just pretend that isn't something that happens.)

@futurebird bought a cheap electric kettle a year or two ago and it is quite useful. I'm not a tea drinker but I'll use it for hot cocoa and ramen. Why less hassle than putting something on the stove since it turns off automatically.

@futurebird @slothrop I want to understand why boiling water in a saucepan or microwave is different from a kettle, I use all 3. Maybe my taste buds have aged out.All of India boils the hell out of their tea leaves, but then they add milk and sugar so perhaps that masks what they have done to the tea. But I want to also understand why boiling tea would also be a problem.Any books I can read about this?

@slothrop @futurebird First I have a teakettle, I also hot the pot to make sure it stays as close to boiling as possible. But I fail to see the issue with microwaving water. It does the same thing. Are you going to ruin the texture of water? And I don't buy this uneven heating stuff

@asbestos @slothrop It's not the uneven heating it's that it never comes to a rolling boil fully unless you get water all over the floor of the microwave. The kind of tea I like best needs a fully boiling kettle of water then you pour it over the leaves and strain a few seconds latter. You can't let the leaves sit in the water for a long time. So it's just impossible to brew it correctly with a little cup of microwaved water.

@tadbithuman @slothrop It really depends on what kind of tea you are trying to make. If you just want a cup of Lipton it won't matter, and it might even be better not to get the water too hot to avoid bitterness. (add some lemon even)If you are making an aged Oolong tea, a microwave won't work since you need to pour rolling boiling water over the leaves in a small teapot then strain it right away. Fast brew in small batches over and over. Likewise if you want matcha there are other issues.

@futurebird I'm trying to puzzle out the mechanics of this. So there's a heating element inside the pot? That means, I guess, that there's an electrical socket of some kind on the bottom of the kettle like a normal kettle. But then there's *also* a water pipe on the bottom of the kettle? Water under pressure triggered by when you put the kettle on it? Isn't that kind of a short circuit waiting to happen?

@futurebird Most homes in the US have access to 220v, but it's only used for things like clothes driers and air conditioners. In one place I lived, I installed a dry sauna that used 220v, and at the same time added a circuit for a 220v kettle I brought from Europe (hard-wired, not a 220v socket someone might accidentally use). Heating water for a cup of tea took about 20 seconds.

@futurebird when I lived in San Francisco bay area, one of the first things I bought was a kettle for hot water; tea, coffee, hot coco, etc. But I had to run an extension cord to a different part of the apartment; the breaker assigned to the kitchen didn't carry enough current for the microwave and the kettle at the same time. Kettle only lasted about 4 years. When it died, I couldn't afford to replace it, so I've been microwaving water ever since.

@futurebird @tadbithuman @slothrop We actually purchased a Kitchenaid kettle that has different temperature settings ⦠because it depends on the tea youāre making. The one we got has sorta decent insulation, too, so we just fill it and heat it to whatever tea weāre making then reheating to another temperature for the next cup is usually quick - as quick as the microwave.

@futurebird@slothropYou need a nucleation site for the water to start boiling at 100c then you don't get the "bumping" but seeing as most people don't do that I'd say the kettle is the way to go. I want to upgrade to one with a precise temp control so I can do green tea and coffee correctly too

@ShiitakeToast @asbestos @slothrop Temp control is important for Japanese teas, sencha, matcha and all that. With aged Chinese teas you just boil the water and go. (this makes aged Chinese teas sound less subtile ... but I think they are equal in complexity. Just very different tea brewing styles)

Whereas many Chinese Oolongs and Puerhs get *better* with age, so you can buy them and drink them 5 years later and have a new experience.

@futurebird @slothrop I actually went down the "microwaving water for tea" rabbit hole once, and apparently there are only two real reasons not to do it: it can make the water dangerously hot (which: okay, be careful) and microwaving can heat water to different temperatures in different places in the container (which: fine, stir it). But so far we I can tell, there's no actual reason why microwaved water is different than stove-boiled water.

@futurebird We still don't do much tea (have some bags of green, rooinos, and earl grey) but a friend gave us an electric kettle as a house warming present, and ever since our last coffee maker died, we've been using it to boil water for a French press. When and if this dies, I'll get another; I haven't boiled water in the microwave in years.

Solution for that is the same as for temp variability: lean a chopstick or wooden coffee stirrer in the cup while nuking. (Kept one in my desk at the office for this purpose.)

@cavyherd @msbellows @slothrop Another issue with the microwave is there are often food particles or oil residues in there. These can become airborne and make the water taste ... odd. A microwave need not be gross and dirty for this to happen. Tea water after someone heated up a sauce with a lot of garlic... it's a danger.Is this prissy? Yes. It is. But it's true. A kettle (stove or electric) should be for water only, and the tea should be brewed in containers only used for that type of tea.

The biggest problem is that on an electric coil stovetop, they barely touch the coils which are never perfectly flat after a few years. Do real tea drinkers only use gas stoves if they don't use an electric kettle?

(For the record, the saucepan I use to boil water ONLY is used for that purpose. Which is annoying, bc it's a great size, & they don't make those anymore š¢)

@futurebird @mhthaung @cavyherd @slothrop Okay, but I do sometimes hard boil eggs when I'm boiling turnips (which we use in salads). Kills two birds AND the beets add color to the eggshells, making it easy to distinguish between raw and cooked eggs.

@futurebird @tadbithuman @StephanieMoore @slothrop The big difference is temperature. Unless youāre using a thermometer, you run the risk of burning your tea. Not quite as important for black teas and maybe some oolongs, but if you put white or green tea in boiling water, itās going to taste like an ex-lover: bitter and unpleasant. An electric kettle w/ temp control is the only way to go, imo. (Iām a tea snob)

@futurebird Biggest thing Iāve found is to get the time and temp just right, especially on green teas. Big fan of Zojirushi https://www.zojirushi.com/category/water_boilers_warmers/ or the cuisinart cordless hot water kettle with multi temp select (great for pour over coffee as well)

But with a nice Oolong you want the water to be really hot unless it's some kind of formosa or young fresh Oolong. (then it's a bit like sencha)For aged Oolong you want the water as hot as possible and you want to minimize the time it's in contact with the tea. You also want to brew the leaves all the way down with lots of water changes. Hence the tiny little teapots.

@izzyamar @tadbithuman @StephanieMoore @slothrop Though I also think the small teapot thing is just about being able to pack it full of leaves even with a very expensive tea. So you can get more out of it and drink more teas in one session. And pouring water over the pot is just fun. It's like having one of those water play tables that they have for kids, but the water is hot there is a lot of steam and you get to drink tea.

@futurebird I bought an electric kettle for the first time in 2018 to save money during a long trip. I always take it with me when a hotel stay is involved. It's worth lugging along. It spares me from having to drink some really awful, bitter tasting hot teas from commercial chains.

@futurebird Looks like more kitchen clutter. I have a dishwasher, why would I need a second one. Heck why do I even need a kettle, the microwave works perfectly fine without taking up additional counterspace. (full disclosure - my house was built in the 60s so the usable counterspace for electric appliances is under 3 linear feet.)

@futurebird I've got an electric kettle in the US - one of the first things I acquired over here, and it's working fine ~16 years later.British tea ritual? Empty kettle, run tap for a few seconds, add water to kettle. Boil, and just after the kettle clicks off, pour boiling water into mug with (Yorkshire!) teabag in. Forget for ~5 minutes. Give teabag a good stir and prod with teaspoon (or back of fork) and remove. Add milk.:cuppa: (There's all sorts of fancy tea - and then there's this.)
