btw, native speakers of English, help me out with the naming:Can I call them pickles? In my understanding pickles are made with vinegar, and those are not. They are made by putting cucumbers, fennel and garlic in a jar and pouring boiling brine (water+salt).

@stfn as a North American native English speaker who enjoys making lacto-fermented (brined) cucumbers as well as vinegar cukes, I must admit that the average person doesn’t know the difference and call them all “pickles”.However, the terms “sour dill” or “sour pickle” are often used to describe lacto-fermented vegetables among those who know.I seldom photo my brines, but here are a couple from a few years back. One vinegar one lacto-fermented.

@stfn "pickle" to me is a lacto fermented pickle - not vinegar. Sometimes a "dill pickle" - obviously implying a version in which dill is involved.I think that back home I'd call them gherkins if vinegar pickled.Speaking from an Australian-English background, but having lived in the UK for 17 years so a bit of a mix.But I've noticed Americans seem to have a whole other language when it comes to some aspects of pickling/canning/fermenting.

@stfn having reviewed some other replies on the thread now I think the real answer is an unhelpful: "it depends" - as is so often the case with this chaotic mish-mash we call a language.It'll differ family to family based on cultural and regional backgrounds and experiences.

@stfn FWIW, I say "lacto pickle" to people most of the time to give it some precision. Not sure how many people in general would understand that though, I talk to mainly people who will know what I mean. (I don't think I've ever seen it referred to as a "sour pickle" - but maybe sometimes "salt pickle".)

@stfn I think I'm odd versus the typical, say, "English" person in that I've a food background with a lot of continental European and also south-east Asian, especially Japanese, influence (where there's a whole other world of "pickle"!) I think this is probably more common for someone from Australia than England - but there's the added complication that I grew up in restaurants and my parents are chefs, so am more cuisine-aware than your average bear. TBH I'm probably not a useful reference 😅)
