       So I spent a big chunk of my life living next door to Louisiana (Houston) and now I live next door to Quebec (Toronto) and it just this moment occurred to me to check if Quebec has beignets. Like, I'd simply *assumed* if I ever went liking for beignets I'd find them. So I asked a Quebecoise friend, andOkay, so they *do* have them, but—Quebec beignets have *holes*???My world is (topologically speaking) rocked

       @mcc ooh, those look interesting. I don't think I've ever seen them in Quebec. As far as I've known, "beignets" just means donuts.On an adjacent note, have you discovered beaver tails yet?(photo of New Orleans beignets attached for those who, like me, had no idea what they are)

       @dragfyre My roommate showed them to me when I brought of begniets and… they don't look better than timbits tbh. Kinda more like funnel cake

       @mcc @dragfyre Yeah, my opinion was that beaver tails were like elephant ears with more/different topping options. I liked the one I had but it sure isn't a fluffy beignet 😅(Side note, we went to a street fair the other day and kept trying to get an elephant ear but they were all "sold out" and only had funnel cakes 😭)(Side side note, on the other hand, the local Creole place does beignets stuffed with mango preserves and they're divine 🤩)

       @mcc In Quebec, the word "beigne" is used to describe donuts with holes, but also those that are stuffed with cream or fruit jam, as well as munchkins/timbits. "Beignets" may refer to small donuts, but is also used interchangeably with "beigne" regardless of the size.In reality beignets is rarely used casually in Qc as it's seen as an overly fancy way of saying beigne. You'd only see the word beignets on packaging.
