@mttaggart Argh. I used to love my gas cooking stove. Fortunately we've long since replaced it with an induction stove. Works just as well for cooking, without the harmful side effects.

@mttaggart @mekkaokereke Your framing doesn’t match the story. The reasons people love cooking over a gas flame are a) it’s intuitive, you can see the exact amount of heating regardless of a number on a knob; b) at high flame you can heat the sides of a wok or similar; c) it satisfies something primal.That’s completely different from the “hidden” reason NOT to use a gas flame, which is the point of the story.

@mttaggart it's funny, I bought a house recently with gas and hated using it. I hadn't read much of the modern information about gas, but I have pet birds who were very sensitive to air quality.I went to the appliance store and told them I'm replacing a gas stove with induction, and the guy launched into a big thing about how those studies didn't show anything, etc. That seemed like an odd way to lose an easy sale...

@mttaggart @mekkaokereke After 2.5y living in Europe with a modern electric stove, we still find it less predictable and harder to manage than a good gas range. We’ve encountered some induction stoves in Airbnbs that were fantastic, though.We definitely still miss the gas stove, but all of the reports have us thinking that even if we move back, we’d want an electric or induction range.

@sangster @mttaggart @mekkaokereke There is no real technical reason for electric stoves having this poor usability. Knobs used to be everywhere. Now suddenly they are nowhere to be found.

@mttaggart *raises hand*My friend of the internet because I haven't found anyone who can help with this so I might try with you: But what happens if the power goes out? Seriously... I was in TX in 2021 when they lost power and the gas stoves were the only ones working So if you can tell me how to make it go-go when that happens... I too want to help the planet 🙏

@Aviva_Gary There are giant emergency battery banks commercially available. But also, this is why I have gas canisters for cooking in an emergency. In Cali, I'm not about to trust a gas line after an earthquake.But that's different than making an everyday cooking choice

@mttaggart @Aviva_Gary the power outage lasted a week, much of it in below freezing temperatures in my area. I'm sure a camp stove is great in a warm climate to heat up food but I was literally boiling water and filling mason jars to tuck into bed with us to stay warm.
