       I bloody love mushrooms, eat them probably five times a week, but…Oyster mushroom recipe ideas, please! (So far I have had terribly english fajitas, ramen, fried rice, creamy pasta sauce, and sauce with salmon. I have puff pastry tart on the list. Don’t want to just sauté and freeze unless I have to.)

       @Flick I'm thinking about this too, as we're spawning as we speak and I'm planning them to be the main dish at Christmas.  I was thinking stroganoff but was thinking they might need other mushrooms to bulk/meaty it up?

       @Lady_Penelope Stroganoff is on my radar too. I think they’re meaty enough, tbh. If you’d served me this evening’s ramen and said it was tofu I wouldn’t have argued. The stems especially are hefty.

       @Flick @Lady_Penelope I’ve never tried them, because never come across them.Have heard they taste slightly aniseed…do they? If so, wouldn’t like them.

       @Flick I love mushrooms but oyster mushrooms are not my favourite as they can be a bit bland and/or rubbery. I sometimes use them in other dishes but with added rehydrated porcini mushrooms to add flavour. If they are a decent size you can slice and spice them up to make them a pulled pork alternative or mushroom shawarma. Another option is to make a tangy batter and deep fry them.

       @Flick One of my favourites is a rice and mushroom soup:Sauté finely-chopped onions and celery, then add chopped mushrooms.Season with garam masala, then add some stock and simmer.Then add cooked long-grain rice.It can be as thick and hearty as you please, so adjust for preference. Serve with a few shavings of parmesan and a sprinkle of chopped parsley. Otherwise, there's nothing to beat mushrooms on toast (just gently fry them in a mix of butter and olive oil with some garlic and chilies), or mushrooms added to scrambled eggs.
