       @GettingCooked Its easier with a gas stove and a smaller pan. With restaurant equipment I can get onions sauteed pretty fast. Also pro-tip, heat up the oil or butter first in the pan, the onions should start sizzling immediately when they hit the pan.

       @GettingCooked Browning onions is usually shown in a heavy metal pan like caste iron or stainless steel, something that can take high heat.  Non-stick pans you can't heat high temp so to brown onions and vegs avoid non-stick.  Lower heat causes the water in vegs to come out and stick around so no browning.

       Done. I'll take some of the advice received today and try a different pan, cast iron, and higher heat, next time. Now to assemble a steak sandwich.

       @Myshkin @GettingCooked For a really hardcore caramelization, add some chicken broth and white wine (like a half cup) when the onions are starting to brown on the edges. You can keep reducing and adding more broth. But that process takes like 20 minutes or more.

       @charlie_root @GettingCooked i usually add a little water to deglaze the pan and make a sauce when cooking vegetables, and it sort of pre-cleans the pan in the process
