How do I tell my undergrad students in my class this semester that I have ADHD and can basically never handle folks showing up at random times outside of planned meeting hours because I can't handle that much task switching

@TaliaRinger You don't owe anyone an explanation. But you can just tell them that you value their time and expect them to value yours, therefore make schedules and stick to them, because that's what you're going to do. That's why scheduled appearances are so important in life, it expresses respect. If they don't know that lesson yet, it costs nothing to teach it to them. If they show up off schedule, you're busy respecting the time of others. Can't do it, sorry. Reschedule.

@Itty53 @TaliaRinger +1 to this. You don't need to bring up details like ADHD and instead just emphasize that you're available during calendar open hours (or via email if desired). That's quite reasonable assuming there are enough slots. Also it sounds like this hasn't happened yet so I wouldn't worry about it being an issue for now other than setting initial expectations.
