       I'd like to learn about music theory so I can adequately describe why a song is so special besides "the vocals have a good rhythm and it's catchy" because it's always way more than that

       @phoenix it's really not. Most music is made in equal temperament, which just means the ratios between all the notes is exactly the same, so there's no fundamental character for any keys, it's all about relative pitch at that point.So what really matters are the scales, chord progressions and rhythms, which is what you're hearing that you can't articulate. All you'll learn is the character of major, minor and diminished cords, progressions and modes, it would honestly take you an afternoon with YouTube and a single octave keyboard to understand that, but it really is as simple as the vocals have a good rhythm and there's a catchy melody for the most part.
