it's a consequence of industrialized food. imo it's why chicago was so big into the molecular gastronomy shit in the past couple of decades and why charlie trotter went insane trying to never repeat a menu item, because their sense of culinary was completely ripped out of anything rooted in tradition and chicago had rich enough clientele to indulge in this massive exercise in cope.

not a fan of the bread pan for the form, by the time you've forced out all the air pockets it's crammed in there to an extent that it's hard to dislodge. when i've done it i mold it by hand and the trick is to make sure it doesn't crack while cooking. also fun to wrap it in prosciutto. use a silpat on the sheet pan silpats are awesome and everyone should have one unless you love scrubbing dishes.

In the event my aluminum cookie sheets get kind of fucked up I just throw them in the oven on a cleaning cycle and they come out flawlessNever tried it with prosciutto but I’ve done bacon before which is pretty good but I feel it doesn’t really need it
