       Can you use canned chickpeas to make hummus?There's a giant can of chickpeas at work that I want to take, but I've never made hummus before so I don't know if canned ones would be a problem or not.

       @bright_helpings @quietbecoming Consider saving the liquid from the can and doing something cool with it.  "Aquafaba" can be a substitute for lots of egg things and veganizes a lot of otherwise not vegan dishes.This is an area I want to explore more, too.

       @quietbecoming @bright_helpings My wife wants do a batch of dried chickpeas in our Instant Pot for Channa Masala this weekend.  Good news for me!  That means I will save the liquid, and then thicken it over low heat on the stove before trying vegan mayo or pasta.  From what I read, when you start with canned chickpeas, the aquafaba is already dense enough to work with.  But starting from dried beans means you have to cook off some of the excess water first.

I mostly followed this recipe:  https://www.thecuriouschickpea.com/egg-free-vegan-homemade-black-pepper-pasta/  Probably the most important step here was the recipe author's hint to reduce the aquafaba by simmering on the stove for a few minutes.Here are some pictures of the dough.
