       If you suspend a Sweet Potato in a jar of water and place it in a sunny window, it will produce an abundance of nutritious green leaves to saute like spinach. If you want to, you can detach these slips and plant them in containers or in the ground. Sweet potatoes are different from regular potatoes.  They are in the morning glory family, whereas ordinary potatoes are in the nightshade family,  whose leaves are toxic.Sweet potato leaves contain all of the vitamins and minerals found in the tuber, minus the high carbohydrates.
