Even if, for the moment, we set aside the "eww, cancer" aspect of this, lab-grown anything is always going to be more expensive, and more environmentally destructive, than beef or chicken. It has to be carefully maintained at a certain temperature, pH, salinity, etc-etc-etc., and it has to be fed some sort of already-prepared protein. Where did the protein come from? Soybeans? We can already eat tofu if we want. Feeding some crappy little cell culture is going to require chemical intervention, to break down the soy with steam, or acid, or alkali, and inevitably require expensive industrial inputs, and produce a stream of industrial waste -- worse than shit. Beef and chicken have evolved alongside humans for 10,000s of years, and are able to eat bugs, grass, clover, and so forth. Their complex digestive systems alter the shitty protein in the bugs and grass to make it edible for us. BUT, EWWWW! CANCER! I just can't ...
