       I wonder, are single-shot baskets even a thing in speciality coffee? I feel like they use 18 grams baskets for any size of shot

       I know breville sells funny single-shot baskets that have the same height as an 18 grams basket, cuz it gets narrower towards the bottom, it's cone shaped

       @Hothrin@transfem.social those things are a nightmarethe narrowing walls mean the coffee bed has uneven depth, so water rushes through the thinner areas near the walls while the center remains under-extracted basically by design. i dont think anyone uses them tbh. just a bad designcompanies like VST and IMS make precision single baskets with better geometry, with standard 58mm diameter but shallower, holding 7–10g. they perform significantly better than the tapered ones, though they are still not as forgiving as a double. perfectly workable though

       @Hothrin@transfem.social not really, nothe standard in most specialty shops is an 18–20g dose in a double basketthe shallower puck geometry makes even extraction harder because water it lets water channel more easily through the thinner coffee bedbecause of that, they are more finicky to dial in, and since shops are already dialing in on the double basket, switching between the two would mean maintaining two separate grind settings for really no gain. if you ask for a single, most shops make a double and throw half away

       @Hothrin@transfem.social yeah, the philosophies are almost entirely opposed in many waysi think a good comparison is third-wave treating espresso more like wine. Italians would probably find a 1:2.5 ratio light-roast single-origin shot undrinkably sour lol
