The French that settled the Louisiana area were brought there against their wills and basically forced to find a way to scratch a living out of inhospitable swamp land, so for sustenance they made do with what was available: frogs, gators, crawfish, and Nutra (basically a swamp rodent that looks kinda in-between a rat and a gopher). Dang, sugar & butter is good on grits, but I like mine with a little bacon grease or crumbled-up bacon or sausage. I overheard a yankee ask a waitress, "What's that?" She said, "Them's grits. Them's good." He wouldn't even take a bite, the chickenshit.

I don't really care how anybody likes their grits. It was just a play/joke on the Southerner vs. Yankee dichotomy and the fairly well known fact that Yankees often put sugar in their grits.For the record, I actually tried it once. I cooked them up as usual, with lots of butter, and sweetened to taste with table sugar. Then, I asked myself a simple question: "If I'd never before tasted any grits recipe whatsoever, and this was my first time, would I like it?"Me: "Yes."Also me: "God have mercy on me, a sinner."

don't be silly. Southerners do this all the time. I like maple syrup and lots of butter. for cheese grits, 1 cup grits, 3 cups water, 1 cup heavy cream, 1 stick butter. cook that until tender, take it off the heat, then add 1 pound grated cheddar, 1/2 tsp mustard powder, and pepper to taste

well, you ain't gots to eat it, Miss Scarlett. Wignatia promises it's delicious, though. I've tried making strawberry-rhubarb pie myself, which usually has an oat streusel topping, but my efforts have not been satisfactory

Sometimes it's tough to cook for one, especially things like gumbo that are usually made in a huge stock pot. Zatarain's is the real deal in a manageable size. It's good as it is, but add sausage, shrimp, or chicken for a real meal. Yum!
