I lub the apple, @DMA, followed by pears. My fave apple being the Granny Smith (tart is best). Yeah McIntosh are gud, and Pink Ladys are a treat, but my goto are the dark green Grannys.And there are so many good apple memes

Pink Lady/Cripps Pink make for excellent apple tarts, due to their strong sweetness. A bit much for apple pie, though.

Never made tarts. I do a fifty fifty with my apples for pie, @BrokenSword. Three sweet, three tart usually makes one pie.@DMA
