@benis_redux When are you making it? I’m doing stew at some point over the next few days if you want to cook along, those mushrooms will go in it. Need 24hrs notice to defrost meat, though.

@benis_redux I can probably do tomorrow afternoon, if you want? I know basically what’s going in it, so I can give you a list.

@Flick I *am* a little but dumb but I assure you I can follow instructions; we can however compare our results if you'd like to. What I'm saying is that you (probably) don't need to babysit me over the internet, is all.

@Flick but yes, a list of ingredients would be super. Left to my own devices I just buy random legumes and cuts of meat, throw them in a pot for however long, season at random and call it a day.

@benis_redux Soak your dried mushrooms in boiling water, ffs. Stewing beef (the bits are always too big here, cut them up further to about 1/2” cubes). Cook it until it’s browned on all sides, then throw in a tablespoon of flour and cook for another minute or two (this will thicken the sauce up). Set aside. Same pan, an onion or leek, until soft. Garlic for the last minute or so if you like. Add small diced carrot, swede/rutabaga, and — if you want it to be a complete meal — larger diced potatoes, cook for a few minutes. Put the meat back in, add beef stock/broth to cover. Chop the mushrooms if needed, add them and all but the dregs of the soaking water. I would add a little bundle of woody herbs, but it’s probably not worth buying multiple types to make one and wasting the rest; maybe some thyme or a couple of bay leaves? I would also add marmite but then I’m English. Simmer for a couple of hours. If it looks too dry, add a bit more hot water. If it looks too liquid, boil for a bit at the end. I just kinda assumed you wanted beef. You could sub chicken, much reduced cooking time and I would also add bacon and probably also a can of white beans.

@Flick interesting, but what on Earth is an inch? I already have a carton of chicken stock so I will opt for going with chicken, thank you.I assume frozen cubed potatoes will do? Peeling potatoes has never been my idea of a good time.I have some dried oregano and garlic powder, I can get another herb of your choosing. Thank you, this is very helpful.

@benis_redux You’re welcome. If you go chicken, I would personally ditch the potato in favour of beans (why? No idea). I have never in my life encountered a frozen cubed potato. My gut feeling is that they will need shorter cooking time so if you were following this then I would put them in after an hour or so, but if you’re doing chicken then add them as above (and reduce simmering time to maybe 3/4hr). If you’re doing chicken then definitely tarragon, fresh if possible.

@benis_redux Fair enough, if that’s what you like! Fresh chilli would be better, though, finely chopped. And drop the tarragon, it sounds like an ill-starred combo.

@Flick I have a hundred grams of what apparently is the hottest chili powder known to man to go through; no idea why it goes so hard but here we are.I bought an inoffensive-looking shaker of the stuff thinking it'd be regular strength, but a couple shakes in a full three liter pot makes the entirety of the food purely taste hot and nothing else. I'm in for a marathon with this stuff...

@Flick @benis_redux So the other day I bought a ready made polish pork stew with water cress and other vegetable & I heated in the microwave as you do & before I tried it I sniffed it & thought urgh! that doesn't smell nice, so then I tried it and took about 5 sips of it & new there was some in it I didn't like and then I thought what the fuk is in it that my taste buds don't like and then it came to me.. it had dill in it..😡 & it overwhelmed all the other flavour that were in it .. DILL ...😢 So I poured it all down the sink ... & had a bacon & egg sandwich instead for tea ...

@Flick @benis_redux Adding the garlic for the last minute of veg saute is the way, western man. I see so many people burn their garlic by throwing it in the pan too early.

@adequate @Flick I use garlic powder because it's a lot more straightforward, despite being less flexible than whole cloves. Much more consistent results, that much better for a novice such as myself.

@adequate @Flick the peppers' rough pieces are a product of me heavily winging it and the fond almost burning as a result. I had to chop them up real quick.

@HebrideanHecate No chemical crap, but they do have other flavourings in them. I think I’ll stick with the powder, though: easier to portion out.
