@ShowMeYourLibrary Normal American pancakes are better than stupid french crepes (pronounced 'craps').

@AsukaNeko @ShowMeYourLibrary Good crepes are memorable; I know there are better toppings, but my preference is to just douse it until drenched in butter. Salted butter; Europe in general appears to prefer unsalted, which is a shame.

@AsukaNeko @ShowMeYourLibrary Essentially they're just a really thin pancake, but the batter is slightly different and it's meant to cook hot and really fast. We eat pancakes by the stack, where crepes are more often eaten as a dessert/snack offering, and much less.I grew up making myself scratch griddlecakes for bregfas; I don't know anyone that ever made crepes-alone an entire meal.

@NoDoxGregBrady @AsukaNeko @ShowMeYourLibrary A good trick i see home cooks not do is making pancake batter the night before. That's how you get that nice thick pancake

@Escoffier @AsukaNeko @ShowMeYourLibrary I like them thinner; the really thick ones are not for me. But I really do want the pancake to exist as a butter-delivery-device. The amount of butter necessary to make those thick ones work becomes unreasonable at a point.

@NoDoxGregBrady @AsukaNeko @ShowMeYourLibrary Whatever you like is the correct answer but technically they are supposed to be thick. Every breakfast place i worked at made the batter the night before

@AsukaNeko @NoDoxGregBrady @ShowMeYourLibrary It makes a big difference. Make sure the pan is not too hot because you need to cook them longer or you'll have raw batter in the center

@AsukaNeko @NoDoxGregBrady @ShowMeYourLibrary I dont know all the science but I can say when we ran out the batter was never quite the same
