You tried milk kefir?Kinda sour but I think the lactose is converted to lactic acidI make a few liters per week and mix it with protein powder@Mitsu

they basically last forever if you change the milk every 2/3 daysyou can leave it longer but at some point (maybe a week) it's "too long", but the grains are probably fine to reuse even at that stage, just change the milk and dump the "waste"https://www.amazon.ca/dp/B004RCSWGG/@Mitsu

the speed of fermentation depends on the temperature, so fridge is slower, counter top is fastnormally I leave it out of the fridge for a day to "get started", then in the fridge until I need it@Mitsu
