@FeartnTired She doesn't speak Italian in the video, but she has a very Italian accent.I'm not going to make any of these pastas, I just like her general demeanor, it's very Italian but also quite understated. https://www.youtube.com/watch?v=IHlqOBNMyvY

@Gnomeshatecheese That’s a big rolling pin! I should try stuffed pasta some time. I’m surprised that such a small amount of egg in the fillings is worthwhile. Having just saved the third recipe, while you’re told at the pasta-making stage to save half an egg it is never actually mentioned again, which is odd.

@Flick Wouldn't be the first time a cook forgets to mention a detail.I didn't even notice, I was just watching it for the entertainment.

@FeartnTired @Gnomeshatecheese Nope! Not keen on nuts. Tbh, not very keen on ricotta but I reckon one could sub mascarpone, or a thick white sauce.

@Flick @FeartnTired A friend told me she and her then husband would puree cottage cheese and use that instead of ricotta (cheaper, easier to get where they were). I was a bit suspicious, but decided to try and it actually was pretty darn good. If you like that sort of thing, that is. Cottage cheese has a slight sour tang to it, but I come from the Land of Sour Milk Products, so.

@Gnomeshatecheese @FeartnTired I think I might actually prefer that, it’s the grainy texture I dislike.

@Flick @FeartnTired I used to have a thing about the texture as well. But seems cottage cheese here in central Europe is softer and creamier than the equivalent in Finland, so I don't mind it now.

@Flick @Gnomeshatecheese Liam uses it like that, it's the endless adding it to desserts or baking it he hates! I don't mind the texture, and I already eat a lot of yoghurt. But as with anything higher protein, I can't eat very much of it at one time. Currently managing 200g tub over 4 days. There was a video recently pasta sauce was can of maybe butter beans blended with cashew nuts and nutritional yeast.

@FeartnTired @Flick If you're not bringing overcooked cabbage into my house IRL, I don't expect an apology either.

@FeartnTired Could be interesting. Not sure I’d put so much spice on it, but the basic cabbage plus butter would be nice.
