if you got a non store bought sweet potato that aint' been sprayed iwth shit to keep it from sporouting as fast, THEN yea, otherwise, buying some prepared slips for platning would be better than sprouting slips off a sweet potato from the store.

Depends on how well your last crop formed. Always pick out the biggest and prettiest for seed for the next year. I've been growing the same 3 heirloom potato strains since 2006 ~ish. The farmer who gave me the seed had been growing them since the 50's. You can essentially cultivate offspring that grow spuds that won't fully fit in a 5 gallon bucket.
