If you look at the amount of dookie that flows out of Indian rivers and the pattern of movement into the surrounding ocean. You quickly understand why you never want to buy frozen seafood products from Indian sources. Two of the most common Indian seafood products that you see are pasteurized crabmeat and frozen shrimp...both of which feed on Indian dookie. Here at the Tavern we do use some non US seafood products, but you can usually find South American sources, which are much cleaner and more trustworthy than many/most Asian sources.

@EscapeVelo @wizardmanperson After watching what goes on with farmed seafood, I started buying only wild-caught. Now, I can't even trust that - even if it is from any country adjacent to India. Unless it is wild caught in the USA, I'm not touching it. If it doesn't have country of origin on it, I'm not touching it unless I watched it come off the boat.

Possibly the best and most delicious fish I've ever eaten... Fresh is BEST!

So I checked at the grocery store today and they did indeed have frozen shrimps on sale... (of course they were the absolute cheapest).Thankfully, I've never bought these particular ones before, and I also found several Argentinian/Patagonian ones that were only $2 more. Meanwhile, the $5 shrimp cocktail I buy from time to time only said "Farm raised", but didn't specify where (though I suppose if it wasn't from the US they'd have to say so.What's your take on farm raised shrimp? I've heard they can get a bit dicey because of overcrowding or whatever, but hopefully it ain't as bad as the jeet cloaca product. 🤞

I use farm raised shrimp from South America that is very high quality. Farm raised, like anything can be better or worse, depending. But it's been my experience that farm raised fish (like salmon) are more problematic in a farm raised situation. We used to have a shrimp farm near here, the ponds were interconnected to the tidal waters via ditches and so were very clean.Costco used to have US frozen wild caught shrimnp in frozen bags a couple of years ago, which was excellent. But you have enough knowledge to be aware of the country of origin of shrimp to make better decisions now, and to prefer South American sources to Asian.

Thanks brother. Will be making sure from now on no jeet shrimp ever enters my kitchen, or even my shopping cart. 🙏 Ecuadorian is cool too then (some of it was from there)? Honestly I'd probably trust the Argentinian (especially Patagonian) product more because there's not as many brownoids mucking about down there but I figured it can't hurt to ask.

I think the Ecuadorian shrimp is White shrimp, like is found in the US gulf (white and brown spawn at different times of the year). Peruvian, Ecuadorian and Chilean shrimp are all of excellent quality.

Well, in theory, the SHOULD be local shrimp around here (you can even harvest them yourself, though they will make you get a license), but in practice, I haven't seen any at my local supermarket. I believe even the "fresh" ones at the seafood counter come in frozen and are merely thawed for your convenience (I haven't checked where those come from).The ones sold in bags in the freezer aisle are all South American (apart from the cheap Indian ones they got on sale). Oysters and crabmeat are local, however.

Frozen seafood is perfectly fine. And you are right, mostly the fresh shrimp at the counter, fresh scallops etc are just thawed onsite.

He's the one who told me never buy seafood at the meat counter, but to go to the freezer section and get it as that's where they get the stuff behind the counter.

Frozen seafood is very good and holds well for months. People in the interior of the US should have plenty of choices for quality frozen seafood. Oftentimes, just as good as the restaurants are using along the coast.

Yes, plenty of good seafood in the frozen aisle. And that let's you thaw it at your convenience. Dont use warm/hot water to thaw, dont use the microwave to thaw. Use cold water from the sink tap, you can let it sit in water or let it set in the sink and run water over it (in a bowl of water) to speed things along.

That is unlikely, but it's just safer to buy frozen seafood in general. Unless you really know the pipeline. The big restaurant distributors go through a lot of seafood and they have direct pipelines with the producers. Even so there are back up frozen products available, if the pipeline guesses demand wrong.

I only see fresh seafood on ice displays at swankier grocery stores in better parts of town. They generally have good handle on how much they need to thaw out or can sell per day. So the refreezing minimal to none. Same as a restaurant.

Salmon & anything else should be 100% frozen to -10F for full safety.But to EV's point, if done right, frozen is just as good as fresh IF: the initial quality is good, the freeze is good, and the thaw is good. *your cooking, however, is up to you. 🥂
