       @km preserved lemons are amazing: get some untreated eco lemons, cut into them in quarters, but leave them connected at one end. pour liberal amounts of salt into them and pack them tight into a large jar where the bottom also is covered with about 1cm of salt. let them sit for 2-3 days at room temperature, then fill up the remaining space with freshly pressed lemon juice so the lemons are covered. put in refrigerator, they will get better over time. you only use the peel not the flesh.

       @km it's really nice what kinds of flavor you can get with just lemons and salt :) goes well into most things mediterrain.
