@CN32 Swiss steak is thinly laterally sliced steak braised in tomato sauce and broth.Basically make the whole steak half as thick. OMG it is so delicious.

@PNS I haven't had it in years, but it was in the regular rotation as an evening meal on our family table when I was growing up in the 1960s and '70s - and that was in deep South Texas too.

@bucksnort It's very much a dish of that era. It's not exploding with spices and herb and flavor. It's really about the beef and tomato spending some quality time together.

@PNS You are right. Very much comfort food. I remember my Mom serving it with some mashed potatoes, and a vegetable side. They were usually "Jolly Green Giant" frozen vegetables, because good produce was still a little difficult to come by down in Laredo. It is very nostalgic for me. It also worked great in the electric skillet.
