I have a 5 pound pork shoulder in a sous vide bath. It's on hour 22 of a 48 hour run. Gonna drain it, chill it, then smoke it in Hickory this Sunday.

Tender and amazing, I'd reckon. Rest an hour after bath, then slather in mayo and sear a minute per side in a 600+ degree cast iron skillet. 🤌🏻
