I signed up for a farm share. In theory this will make us healthier and save money— but I fear I may end up trying to give away zucchini to strangers on the street whilst crying and longing for a slice or some soup from zabars:(any tips?

@futurebird if they have a calendar of what they will be growing through the season, it may help to learn how to best make preserves/freeze them so you don't feel the pressure of using them right away

@futurebird We have been doing this for years. Every year, the farm over-produces some crop. They learned early on that they made too much zucchini, and scaled back. Last year was way too much eggplant, and I like eggplant. This year was way too many spicy peppers, and WAY too many tomatoes. I have a quart of really nice Potbelly-style pickled peppers in the fridge, and a gallon of home made tomato sauce there too. And my freezer full of tomatoes and peppers.

@futurebird clear out your freezer in advance so you have space for making large batches of stuff that you can defrost for meals later in the year

@futurebird Here in Minnesota; it is a seasonal tradition to see baskets of free tomatoes, zucchini, and cucumbers in various public spaces.

@futurebird Be prepared to fortify your spirit by saying "this what seasonal cooking looks like, this is good" to yourself while you're looking up a dozen new ways to manage a seemingly-endless supply of rutabaga.More seriously, learning lacto-fermentation based preservation can help with variety of flavor and stemming the tide of seasonal sameness.

@futurebird you HAVE to cook. Make everything you can think of you like with zucchini they freeze like a dream. Do not let anything go to waste. Give yourself time when you get the food. It might feel overwhelming if you don't have a plan.

@futurebird if the farm has a program that donates excess from the farm boxes, you can always tell them you don’t want certain things (mine donates to the local food bank). I liked the other people’s suggestions for places to look for recipes in this thread too. 🙏

@futurebird We've had dozens from the yard this year.Slice the zucchini thin on a mandolin.Layer the zucchini in a casserole dish with some mozzarella and Parmesan cheese as well as some very thinly sliced onions. Salt, pepper, a little oregano. Light garlic powder is good too.Bake it at 350 f until it starts to brown. While it's baking, fry some bread crumbs in a little butter and olive oil .Let the casserole cool for a few minutes and sprinkle the crumbs and fresh chopped parsley.

@futurebird Heh. CSA's get what they get, and yes, it can be a whole helluva lot of zukes. But the good ones always have at least *something* one's glad to see, and you can wear a little moral halo for supporting community agriculture.

@futurebird I experienced farm shares in a past era but back then a far too high percentage of what they gave you was leafy greens, more than anyone wanted to eat. Zucchinis would have been a step up
