       Secret to always having boiled eggs peel easy: keep them wet. Simple as that. The many membranes all transpire water.  The heat drives the water out preferentially at the shell and membranes and they adhere. Keep them wet until the whole egg is at ambient and problem solved. Leave them long enough and evap will eventually make it stick.  Again it's those outer shell and membrane. Determined experimentally.

       @tomjennings I've long subscribed to the chill quickly school of thought. But since that is usually with a cold water or an ice bath, it could wet, not, cold that is the causal factor. Time for some science.

       @tomjennings That tracks.Something I found out about preparing hardboiled eggs: there are too many unknown variables to have one 100% foolproof way of preparing perfect ones. There's a lot of "works for me with the eggs I get from my usual suppliers", plus very strong opinions.The only thing they can agree on is not to leave them in the hot water too long or the edges of the yokes go grey.

       @tomjennings can confirm. left my boiled eggs in the fridge over night - woke up to very dry shells and peeled like shit.
