Here is a tip for making gravy. You want to make the gravy thicker than you want it. Then add water to thin it down to the level you are looking for. The reason for this is that, say you make it the ideal thickness right off the rip. Well, it's not going to stay that way, it's going to get thicker as it sits and cools down. When you add water to it, you are cooling it down so that when you reach the desired level of thickness, it stays near to that thickness.
