"deep dish" "pizza" is just focaccia bread with too much cheese on it. It looks like it'd be like mac-n-cheese... but it's just a RUSE. Chicago trickery. It's ALL BREAD why bother.

@futurebird bread is delicious and there’s no such thing has too much cheese. I love thin crust but I’m not kicking deep dish out of bed.

@futurebird the "Chicago-style" deep dish I get in San Francisco (Patxi's, Little Star) is more like a casserole than pizza. The crust isn't much thicker than what I think of as normal pizza, but it's bowl shaped and full of cheese and sauce and toppings, and you don't have much hope of picking up a slice."Detroit-style" (Square Pie Guys) is a lot closer to focaccia.

@futurebird maybe the Chicago pies I've had were different. it was like a solid inch of tomato and toppings before you hit crust with them. really put the "pie" in pizza pie

@futurebird Deep-dish pizza (I can't believe I'm wading into this) is the devil. I don't understand the theory or practice of it; it's pizza with the caps lock stuck and really needs to calm down.I had the real stuff in Chi town and it was mighty tasty, just overwhelming.

@futurebird the secret is hardly anyone local gets deep dish much - just for stuff like work events or when your friend from NY visits. The rest of the time it's tavern style or something closer to a thicker double dough crust. NY style is a good 2am street food, but never for dinner!

@futurebird Italy has entered the chat. Focaccia has no relationship to deep dish. Deep dish is a uniquely American situation. Focaccia requires multiple risesm doesn't have the "piecrust effect" that deep dish has, and can't support the weight and moisture of deep dish toppings.
