"Golden Ratio: Buckwheat Soba" and it's 80 percent buckwheat and 20 percent wheat??Shouldn't it be 1-sqrt(5)/2 ?ANYWAYS. Gonna make some noodles for my lunch.

Even though the math was wrong these noodles were excellent. If you've never had cold soba with soup base here is how: Boil the noodles, rinse and serve cold with thin sliced fresh green onions. Pour the "soup base" over them in a shallow dish. The soup base gathers a haze from the noodles. Once the noodles are gone pour hot water into the soup base: drink it quickly. Your whole body will get warm. Like a blush. A cures for when the winter cold seeps into your bones.

I remember going to a Japanese restaurant when I first moved to NYC 20 years ago. Growing up in the midwest to me Japanese food was very exciting. (And this was 20 years ago too)Anyway, it was a very cold winter day and they had just opened and only two guys were there and neither spoke English. I pointed to the noodles. I didn't expect the hot water, the guy came out with a kettle and poured the water in the bowl and told me to drink.WOW!Spent the next 2 weeks learning to make it myself.

@Momgoth There is something almost narcotic about first eating the very filling lightly sweet and chewy noodles cold then having the warm soup with the buckwheat dissolved in it hit all at once. The guy was very excited for me to try it and I can see why. It's more intense and lovely than I think can can explain. Makes your skin tingle all over for some reason.

@futurebird I mean I've searched and it just doesn't seem to exist in either Europe or the USI would expect to be able to spend boogie money on real soba if nothing else but the market seems to have failed me

@erincandescent And Katagari will have *fresh* soba seasonally in their seasonal foods section, although I don't remember when "buckwheat noodle" season is off the top of my head.

@erincandescent @kouett To be fair, buckwheat is expensive and hard to cook correctly. It's very sticky and can easily turn to a ball of mush. But it's also soooo goood.
