       @futurebird Chef friend at the Hudson country club said eggs have gone from under $30 a case to just over $90. I'm gonna guess that's for 360 eggs at $3 a doz. For grade A large white regular ol' eggs. The members can afford it but the wholesale price is higher than the retail cost from just a few months ago.

       @futurebird we decided we aren't buying eggs for the foreseeable future. I think we have a couple left. For baking, I'll use some vegan subs (like flaxseed or chickpea water), and we'll just go without eggs for breakfast. Not worth it, especially with the avian flu and lack of a CDC, FDA, and USDA.

       @shansterable @futurebird I've been baking for years without eggs. Bananas are a good substitute. But you can also use Xanthum Gum, tapioca flour(arrowroot), and glutinous rice(which has no gluten). I also do gluten and dairy free as well. Suprisingly works really well. My daughter makes amazing gluten, dairy and egg free raspberry muffins using this stuff. Glutinous(sticky) rice flour is the magic ingredient though. Usually can get it fairly cheap at an asian grocery store. Substitute 1/2 cup of your normal flour for this, and add a little more liquid to the batter - a little more milk and a dash of oil/butter to stop it getting too dry.

       @YellowReadis @shansterable This is the problem with "alternative" foods. I'm allergic to all nuts, most seeds and chickpeas and a few other beans. It makes protein a challenge, and everything is always laced with sunflower oil. I have tried to go vegan but the constant allergic reactions got on my nerves. But I bet a bunch of other people try this. Maybe then eggs will be cheap again and I will survive somehow.

       @futurebird To think until recently my father-in-law had bunch of chickens producing many eggs a day. But last summer some animal got into their pen or henhouse and killed all of them. I don’t think he has the heart to try again while not knowing how to better protect them. But if he still had them I’m sure he would joke about them laying golden eggs for him.

       @futurebird @shansterable argh, that sucks. I'm mildly allergic to peanuts, but not tree nuts, so that does make it easier. Navigating through allergies is very hard (it's why I'm also not vegan - too many allergies in the house). On the meringue, any bean liquid will work if there is one that is safe - I haven't tried the alternatives yet myself, but canellini and kidney beans are meant to work too. Eggs are really hard to replace well. Sometimes you can use tofu(scrambled), sometimes bananas(pancakes), glutinous rice flour(baking), or mixes of xanthum gum and arrowroot(also baking). Maple syrup+ milk/substitute for egg wash works too (though any liquid sugar would probably also work). I would never have bothered doing any of this discovery if I hadn't developed a serious egg allergy. Going with powdered egg if it's cheaper is probably not a bad idea if you can do it. (Glutinous rice flour is what is used to make daifuku, it's how we found it. It's my kids favourite dessert.)

       @futurebird @paulc we've been lucky. Our laying chickens have a large, fully fenced area with a big pen inside to themselves. So far nothing has tried to get in and attack them. I know we have foxes and wild dogs in the area, as well as eagles who like to take the odd chicken.  Main drawback is sometimes the hens go crazy for weeks on end and we get way more eggs than we can reasonably consume. And then other times an egg a day is a lot.

       Listen I'm being melodramatic I will be fine. But a lot of people in my neighborhood will not be. Eggs are a basic staple and often the only protein in some budget diets. They will just be cut out. Not replaced, kids will just eat more saltine crackers and rice with maybe beans I hope.        I'm a little annoyed by all of the comments about the "fancy" styrofoam egg cartons. I photographed these eggs rather than those in the paper cartons because these are the least expensive ones being sold. A nice cardboard cartons and some assurances that the chicken weren't abused "too much" are not things that many people who feel food prices can afford. If you would like to help strong arm the manufactures with me I'm here for it. But come on.

I'm sure that they are raising prices excessively because they can, but we essentially have no way to do anything about that in our current society.        @futurebird It's a bird flu indicator now since we won't be getting accurate info on that problem any more. I have the option to not buy eggs and haven't purchased any for months. It's just me cooking for me so I figure I won't increase demand and contribute to the ridiculous prices for families and businesses who use them.        @apophis @paulc I had a friend out in Brooklyn who kept chickens but then a RACCOON got in and ate two! I didn't even know that could happen. That is when I realized that chickens  cannot fend at all. They got eaten in the middle of NYC. I thought that the one advantage of urban chickens would be nothing eating them geeez. The raccoons don't mess with the bees! Poor little birds. Though apparently the chickens also liked to catch and eat mice? So maybe not totally helpless.

       @futurebird @apophis @paulc Chicken flocks are meant to be protected by the rooster but most urban farmers aren't allowed to have roosters, only hens.

       @craigburdett I do not eat enough food to shop there. If I could buy just three eggs I would. Though at this point I should buy the dozen and give the rest as little gifts. Wrap them with a nice bow and such.

       @futurebird @apophis @paulc Part of the reason roosters are used in fighting is because they are agressive and actually quite dangerous, they grow long talons on the back of their legs and know how to maul with them.

       @futurebird We are in a very bougie condo in Glen Cove and there is much talk about starting a community garden/co-op thing. These divas & dirt?        @futurebird I would hope they are H5N1-free eggs. If not, it's the scarcity driving the price up. We Aussies are paying at least $7 a dozen for our barnlaid eggs at present.

       @futurebird Woah, thats wild! It's seldom you see that stuff is more expensive in the US than Sweden, even with the weak Krona. 12 organic eggs at the store closest to me is about 55 SEK ($5), 20 "indoor free range" eggs is about 60 SEK ($ 5.5).

       @futurebird @apophis @paulc yes, chickens will catch rats and anything smaller than a rat; they're not helpless. Also, they can defend themselves against cats and similar size animals. But a raccoon is too big, and too smart, and all too often is a mama raccoon with five little baby raccoons to feed. Also, female raccoons often work in small groups.
