I use heavy cream instead of milk, but yeah. The only difference between my regular gravy and Southwestern gravy is chorizo instead of breakfast sausage and the inclusion of red bell, jalapenos (or poblanos), corn and black beans.

I agree that it's usually too sage forward. When I make Sausage Crust Chicago Deep Dish Pizza, I mix equal parts breakfast sausage and hot Italian sausage. Works well.
