@Murray_N I took it to 185° it was pretty tender. I would've maybe gone to more but I'm impatient and have my in-laws here I need to fees at a reasonable time. It plateaued at 167° for way longer than anticipated.

@Murray_N Oh. It ran like 11 hours at 225° (the next step down was 180° and I wasn't playing that long of a game), then when it hit 170° I kicked it to 250°, but then the last hour was dragging on so I kicked it to 275° for 30 min then 300° for 30 min.

@halfpint When internal temperature is high enough you can just coast it in.Granted Ive never done brisket but when doing anything from steaks to roasts I bring them in around 130-135 and foil tent them to let the residual heat finish them while aiming for just under medium rare in the center.There’s plenty of medium around the edges for the squeamish and the rare stuff in the middle is good for reheating tomorrow.

@halfpint Being as the whole idea behind slow cooking brisket is to break down an otherwise tough piece of beef you may well need to carry it temperature in the smoker.Only experimentation can tell you for sure.
