       Anyone have a go-to pizza recipe? I've tried a bunch but nothing blew me away. Part of the problem is it has to work in my regular-ass 500 degree oven.

       @ZachWeinersmith I’ve had good luck with some of Ken Forillish’s recipes. Specifically for two in a cast iron skillet. Biggest problem is you really do only need a big spoon of sauce for 8” diameter pizza: too much and it gets watery.

       @ZachWeinersmithI started using a focaccia bread recipe as a pan pizza crust, and it's pretty great, though I think it's primarily the excess amount of olive oil that the recipe calls for.As someone said below, the best homemade pizzas I've had use maybe a large spoonful of sauce, and not too heavy on the toppings (or pre-cook the toppings) to keep it from getting soggy.

       @ZachWeinersmith 350g strong flour, 240ml warm water, 2tsp salt, 2tsp dry yeast, 1tsp caster sugar, 2tbsp olive oil. Mix dry ingredients, then add the oil & water to a well in the centre. Mix to a dough and knead. Form to a ball, leave to rise for 1 hour. Makes around 3 large-ish pizzas. I love this dough, and I like spreading pesto under the tomato sauce. It's also been much better since I got a new oven that can heat from below and has a fan, even though it's only 250°C

       @ZachWeinersmith this is mine. It works for pizza and just general flatbread 😁Others have mentioned cast iron, it’s a great option. Make the whole pizza in the pan. Start it on the stovetop until you get a little bit of brown on the bottom, then transition to the 500° oven to finish. Even better, buy a pizza stone and just bake in the oven on that.
