@MTZIGGY I’m moving this conversation up here so I can show you cards. This will be multiple posts.Totally right. May I give you some advice? Do not believe everything you see people doing on YouTube. No meters or temperature guns or testing with your hands will work. The only way to know the food is completely dry is to run the food for a full cycle, test weight of the food, and then put it back in for another two hours. Keep doing that until you get the same weight on each tray twice in a row. That’s the only way to know it’s really dry. Then get it off the trays and into a 2.5 gallon ziplock ASAP, to get it out of the air. You’ll want to get the food into bags ASAP. Don’t try to weigh out the food in portion servings, it takes too much time, and every minute it’s not bagged it’s absorbing air which has moisture in it. You’ll add a desiccant in each bag that will absorb any moisture, but you still want to limit it as much as possible from the start. Get your supplies out and ready to go before you take the trays out of the freeze-drier. You need things to happen fast.

Thank you for taking the time with information. I'm lucky my sis has been at it for at least 3 years. She sent me a list of who not to watch on YT. I have already started collecting supply's.. The one thing I don't understand is the zip lock bags. I would think that a vacuum sealer would be the only way to go .My sis uses desiccant and Mylar bags for any meat products. I was surprised at really how cheap most of the supply's are in bulk.
