With vinegar you get the acidity without any of the amazing complex flavors. It can be the difference between a fine wine and grape juice with 12-14% alcohol added.

I have a couple of very simple recipes for fermented pickles, and the fermentation process imparts flavors you just can’t duplicate otherwise.If I’m going to do a fermented pickle, I still insist on finishing with a preservation process (like a hot water bath method) at the end of the fermentation to make them shelf-stable. I don’t quite trust refrigeration 100%.
