Today I'm making the cream of potato soup for tomorrow's first course --because it always tastes better the next day.The ingredients are simple. >Russet potatoes‐about 10 medium>3 to 4 long ribs celery>2 large carrots>1 medium to large onion>3 fat garlic cloves>1 box of chicken broth>A half package of thick-sliced bacon>Whole milk,>Heavy cream [about 1 and 1/2 cup of each]>Flour>Salt>Pepper

Start by cutting the bacon into bits and then browning it on medium low heat in a medium size skillet, until its crispy. Drain and set aside. Pour off half the bacon grease (save for your Brussels sprouts, or discard).Peel the carrots and wash the celery. Trim ends of your vegetables and then cut them into tiny dice. Smaller is better. Do the same for your onion. The garlic you can put through a press or you can rough chop; either works.Heat the bacon grease in the skillet, on low.

Throw in all the veggies and the garlic and onions, and saute them, stirring frequently, until they're soft. Low heat is the key, so as to not brown the garlic (and turn it bitter).While the veggies are slowly cooking, peel and cube the potatoes into about 1/2 cubes. Simmer the potatoes in a Dutch oven in gently boiling water until they're fork tender. Drain.Transfer the veggies to the Dutch oven, and return them to the stove on medium heat. Add a few tablespoons of flour, to coat them.

Once they're coated, pour in your milk and cream. You'll get a nice sizzle. Stir constantly until all the flour is dissolved smoothly. Once it comes to a boil again, add all the chicken broth. When the soup comes to a boil again, add half the potatoes back to the pot. Simmer for about 10 minutes and then use your immersion blender to puree the potatoes and vegetables. The soup will turn a light orange color from the carrots and will noticably thicken.Bring the soup back to a boil.

Add the rest of the potatoes back to the pot. Taste the soup and add salt and pepper to taste. Go slow; add and adjust several times, until you get the right amount!If the soup is too thick, add milk. If it's too thin, smash some of the potatoes with a fork, add more cream, and simmer it down more.When the soup is served, you top with your bacon bits.Optional add-ins (which is why they weren't on the ingredients list) are:>sharp cheddar cheese, cubedand >fresh chives, snipped.

@MMA now why bastardize potato soup with chicken broth? And here is a tip I learned from my grandmother. Instead of using flour to thicken it, use a little bit of instant mashed potato flakes. It thickens it nicely and adds potato flavor

For the cheddar, add several cubes to the bottom of the individual soup bowl and then ladle the soup over. Top with bacon bits and chives, if you like.The heat will melt the cheese. This will be just like finding buried treasure in your soup as you eat!This is a simple to make soup that is such a comfort and is a great alternative to serving mashed potatoes, YET AGAIN.For me its something different; a new twist on a traditional combination of standing rib roast and potatoes.
