@WataruTenkawaIt may be deep in the FDA account, but lead acetate (or "sugar of lead") was used by the Romans to sweeten wine. That may be why lead was used.

@Wolf_Baginski @WataruTenkawa The FDA release specifies that the lead in the offending apple sauce traces to the cinnamon, rather than to the apple pulp - having tracked the contamination from the companies that sold the apple sauce to the manufacturer that made it to the vendor that supplied them with the cinnamon: https://www.fda.gov/food/outbreaks-foodborne-illness/investigation-elevated-lead-levels-cinnamon-applesauce-pouches-november-2023 .It does not appear to specify the chemical form of the lead?
