       @yukiame Just pickled chilis.Kimchi has the Korean red pepper flakes.But the flavor isn't that different. This was sauerkraut, then after it started bubbling the chili peppers were added. Cabbage is the simplest veggie to ferment with lactic acid fermentation.

       @Viking  $4.99 / LB  !?!?   Wow.I bought an entire Ribeye at Costco a month or so ago, and just it into about 10 steaks.It cost like $250.

       @IceCubeSoup if you look carefully, my rib-eye steaks are not marbled like the Costco ones.When I have honored guests, Costco is the way to go.

If you salt both sides, you can use about a quarter of the time.Diffusion equation tells that diffusing half the distance takes much less than half the time.
