Are there egg grower out there who have water glassed egg? If so what is your source of lime. What product are you using? Could you send picture of the package. Amazon sent the wrong product. I was told that Lime hydrate for cement can be used, but I can find no information. I don't want to poison myself.

@electronwarier We water glass our eggs using construction grade lime from the hardware store. No deaths yet. Be careful handling dry lime. Dust mask and gloves recommended, but once it’s in the water there’s nothing to worry about. We stored for 4-6 months to get through the winter egg production shortage. I’d send a pic but it’s out in the garage and it’s cold.

@electronwarier wife says an ounce of lime per quart of water. I don’t generally have problems pulling eggs in/out with bare hands in the lime water but rinse it immediately. If you have sensitive skin gloves would be helpful. Also, we experimented with using plastic containers because we were out of large glass jars. The lime water embrittled the plastic and it cracked; moral of the story: use glass.

@electronwarier we never refrigerate our eggs so I don’t know on that one. We tend to be selective about which eggs we try to preserve and only use eggs that come out of the coop clean without needing to rinse. If there’s any poop on them we leave them on the counter and eat them fresh. If we’re preserving they go straight into the water when we bring them in, but I don’t think it’s incredibly time sensitive. I doubt whether the fridge is a problem. It’s fridge temp outside in the coop anyway.

@electronwarier keep in mind that anyone publishing info on the internet is likely going to be very sensitive to litigation risk, and so won’t recommend anything one millimeter outside the established parameters. In practice we’ve had no issues with glassing the eggs. Bad eggs have a way of making themselves known. If you pull one out and it stinks or looks weird when you crack it open it’ll still make great compost.

@electronwarier Note that the yolks (and even the whites sometimes) will tend to thin out and that’s normal. if you like runny yolks in your fried eggs (over easy or over medium) use your fresh eggs for that; the glassed ones are fine for scrambling and baking but the thinning makes them pretty hard to fry.

I have had eggs that are 7 months old glassed not refrigerated. Tasted just fine. Yolks were a bit different but tasted fine. Will try next jar at one year they were not refrigerated sat on my porch laundry room shelf average temp 80 all summer

The recipe we used or instructions I guess where : one ounce of pickling lime per quart of water... Wife thought it mattered to use consumable lime which kind of made sense but other kinds probably work in a pinch. But one bag of calcium hydroxide (one pound) would make quite a few batches. We bought ours off Amazon bc we figured bezos needed more money to add silicone to his woman... 23 dollars for 3 pounds but that would do alot of eggs

@Jonaschuzzlewit @electronwarier Yes, we have also been focusing a lot on reducing refrigeration. We buy bulk meat, so tend to have a freezer full which is a big risk (though we do have a generator for short term issues but a 6 month long SHTF situation would be devastating). We bought two pressure canners and have stated cooking then canning the meat in bulk. Obviously not ideal for fresh cooking, but we’re interested in survival skills not just taste. Works great for soups no matter what.

@Jonaschuzzlewit @electronwarier Best to have a gas stove. Electric would work but you have to get a big pot hot enough to boil. The modern canners generally come with all the hardware needed and have built in regulators to keep the pressure right. The jars are reusable. It’s best to use a new lid each time though.

@DanielStone @Jonaschuzzlewit I have a small orchard with several types of fruits. Bushel and bushels were wasted, not wasted, the deer like them. Next year we plan on canning and drying more. I have been looking for a cooker, similar to the photo. Your gas comment is a good idea.

I have electric which I don't care for but have a gas set burner deal for big pots out on back porch to use in no power tines or for big pots.. That is a nice looking deal. We really need to look into that. Thanks for the post. I forgot meat was something you could can.. Heightens my interest.. Looking into drying and salting as well just to learn the process May never need it but good to be prepared

@Jonaschuzzlewit @electronwarier In SHTF we would likely use our generator time to preserve whatever we currently have frozen by canning (over fire in open hearth if needed). We have canned meats, broth, fruits and vegetables (water glassed eggs also shown in pic). Recommend small containers for the eggs in case something goes wrong you don’t lose dozens and dozens.

Lots of learning to do. The egg glassing was an experiment but it exceeded expectations. Look forward to learning canning. Always been a bit timid about it because of botulism but just need to do my due diligence and learn the ins and outs of it

@Jonaschuzzlewit @electronwarier Maybe check out the beef initiative that @adam always raves about. I think they have a network of organic farmers on a registry. There are a few will ship cross country I think, but that can be pretty pricey I’m sure. Best to find a local place that has a route or community “drop” nearby.
