#HootchReviewI started this mango one a few days ago. It's bubbling nicely. But something strange has happened. The mango has congealed. The question is what do I do? Shall I try to scoop it out now, or wait till it's finished? I'm wary of disturbing the fermenting process and ruining it.

@ned I’d let it run as long as it isn’t in danger of completely blocking the co2 release.That could get ugly.

@ned looks like pectin from the mango, it should settle out but can trap CO2 and lead to a blow out. You can add pectin enzyme to help break it down. I would carefully degas it while that clump is at the top.

@ned Unless the congeal blocks the airlock I wouldn't worry about it. If it is blocked give it a gentle sloshing to keep the goodness going.

@ned @warbacon that thing looks like some sort of octopus SCOBY. Nothing oddly discolored though. I like the pectin theory. It might grow out of the bottle though and get hungry. Be careful.
