       @CSB leftovers are part of the tradition. you haven't had Thanksgiving if you're not eating the turkey for at least 3-4 days after. my fav use of leftover turkey (esp if it was smoked) is turkey salad with celery, red grapes and an insane amount of homemade mayo. Sadly I did not attend a Thanksgiving dinner this year, so I have no leftovers to slather in mayo. :)

       @jennifer I simply don't find turkey meat particularly special; eating it for more than two days would become monotonous for me.        @CSB Americans are very creative in their use of extra turkey! We've had to learn :)I'm with you on duck - esp if done confit (although the best ever duck I've had was in China, which probably sounds cliché, but it was incredible and cheap) This is the perfect time of year for duck. Maybe I'll have a nice duck for Christmas! :)

       @CSB gravy makes the turkey today by the way. And you put it next to cold jellied cranberries on your plate  The tartness and acid from the cranberries is a great combo with the turkey as well as the sweet potatoes. And yeah, we'll do sandwiches for a bit but also have a leftover dinner this weekend. The dog got turkey scraps all day. She is passed out two hours before her bed time snoring.

       @jennifer Previously, I used to eat duck casually for fun. However, I've recently come across articles that reference new research. This research suggests that only chicken and duck are healthy options, while turkey meat is more akin to red meat.
