Has anyone ever made a stuffed pumpkin as a thanksgiving dish before? I’m committed to doing it, I have a homegrown pumpkin, but I need some reassurance that it is going to be delicious. @cake it seems legit. You’re essentially using the pumpkin like a bit of a Dutch oven. If it were me I would slice a teeny bit off of the bottom and bake it on parchment paper with a little oil. That way it has a flat base to sit on. But the pumpkin should soften and squish a little so maybe that will provide a good base 🤔🤔

@cake It has cheese, bread, and bacon - I can't imagine it would be that bad. And that is coming from someone who doesn't really like pumpkin

@Tepid_Tapir I’ve never eaten just pumpkin outside of a pie or cake and that’s part of my worry. But I did taste one of the pumpkins and it’s pretty good. Sweet.

@Ariesian1 my pumpkin is a little misshapen so I definitely need to stabilize it, good idea. Also I’ll be transporting it 90 miles tomorrow lol.

@Kennyben I think I will, seems more attractive. Someone suggested cutting off the bottom to stabilize the pumpkin. I’m just worried it’s going to be texturally bad and mushy but there’s no way to do a test run so into the breach I guess!

@Kennyben here we go. I put it in a springform pan and stabilized it with a wad of foil. That way i can take off the ring and serve it freestanding. My pumpkin was very tall narrow so I cut off quite a bit of the top to stabilize it.

@Kennyben @mrman FINAL PUMPDATESuccess! It was pretty good. The filling was a lot like stuffing, the actual pumpkin part was kind of bland, a little like a generic squash. I think next year I might do it Tex-max style with cornbread cubes and green chiles.

@Kennyben @mrman turns out it’s a pretty tough pumpkin. It fills the need for something big and round to look at in the absence of a turkey I think.
