I had an AWFUL dinner last week in Austin at the Salt & Time- terrible, sub-par service from snobby staff. I'll bet they're going shut down soon. They didn't have enough staff to wait their tables, so they made us sit at the bar (the place was empty) and they didn't have the food on the menu we ordered! To top it off, they had a ridiculously priced dessert that I got to go. It was supposed to be a pumpkin spice cheesecake with candied pepitas. Yum, right?NOT. It was served like this:

Color me unimpressed. I will day one thing for that ridiculous restaurant, though. Their one saving grace was their BEEF FAT FRENCH FRIES.Holy Moly Donut Shop!!!I forgot how good those freaking fries are, since Mickey D's stopped serving them in a kowtow to offended Hindus.Chick Fil A is the best alternative since then, but--WOWSA does that beef fat make a huge difference!So I ordered some lard for pie crusts, and tallow for frying. Time to kick it Old School this Thanksgiving!

@MMA I’m considering Lars this year for pies also. My mom said they always made the flakiest crusts but when I made pies with grandma she used a disco and they were pretty flaky. Where do I get lard? Do they sell it at basic stores?

@DianaSez @Kat Lard is found everywhere but quality matters! Buy a more pricier brand. The better brands of lard do not smell and don't have a lard-y taste to them either. It's a distinctive odor that you'll maybe recognize from kettle chips back in the day. Those used to all be cooked in lard and there was a very identifiable taste and smell to them. Really good lard won't have this.

@wollmonster @SweetIceTea @Phil @MMA lard is fat that is solid at room temperature, usually from pig fat. It's rendered down, filtered, clean white solid fat. It also makes great pie crust, and unlike partially hydrogenated vegetable fat it doesn't screw your arteries, despite what people say.
