       Menu for the upcoming week:* Sun: brisket, brussels sprouts (also making chicken stock) * Mon: sour cream chicken enchiladas, black beans* Tue: tomato soup, grilled cheese sammy* Wed: Thai basil chicken* Thu: braised oxtail, roasted garlic mashed potatoe And then next Sunday, I'll be making the turkey stock from last year's turkey for this year's Thanksgiving.

       To be fair, there’s a decent chance this gets modified as we work thru the week, depending on things like how work is going, if I get to the gym on time or not, the leftover situation, etc But I’m also pretty excited to be fully back into “cook in the oven” season and that drove some of this menu

       Brisket at the point of the flip, when sauce was added, and then at serving. This was great, and paired well with the balsamic glazed Brussels sprouts I served with.
