@TrueNorth77 @halfpintIt is a real pickling of peppers with lactic acid fermentation, I just use pickle juice from sauerkraut to get the process started quickly, to reduce the chance of spoiling.Here is last year's peppers.

@TrueNorth77 @halfpintAfter a day, the salt has pulled out enough water to get 80% of the way to the top of the cabbage.Tonight, I might weigh it down with a bowl, so all of the cabbage stays in the brine.After it bubbles vigorously, I can add the chili peppers, and extra salt, so it stays above 2.5%.Might take a week, unless I put it in a really warm spot.It is much faster in the summer.

@Viking @halfpint Which is the problem I always had with the whole Peter Piper thing… You don’t pick a peck of pickled peppers. You pick a peck of pristine peppers and put them in a pickling pot to pickle.

@TrueNorth77 @halfpint Could be, but my main purpose is to preserve the peppers by lactic acid fermentation pickling.The high acidity and salt prevents the bacteria that otherwise can cause rotting.
