@schizanon No, it's a porridge.Tofu is made by coagulating the proteins of a liquid (soy milk) and pressing them, exactly how cheese from animal milk is initially formed.Mao tofu (fuzzy tofu) is very similar to how cheese is inoculated with specific mold spores, which produce protease that transforms proteins into amino acid for the umami flavor.
