       @CrimeaRiver @Mummabear that would be my first call too. And if there's too many tomatoes to eat while they're fresh, slice them up and stick 'em in a dehydrator. Dried tomatoes are surprisingly good in the winter if you sprinkle them with olive oil, add some garlic and let them sit overnight

       @Mummabear cut them up with some onions and let them marinate in apple cider vinegar overnight. You can add a little fetta cheese as well.

       @CrimeaRiver @Mummabear personally, I use a cardboard box with one of them Chinese thermo-ventilators and a thermostat. You keep it at 60°C for two days and it's all bone dry. I tried the oven once, but I burnt everything, so.... 😂

       @ThatCrazyDude @Mummabear My wife does romas in the oven at 170 degrees for about 3 hours. They turn out beautifully. Packed in olive oil, we give them as Christmas gifts

       @n3jln @Mummabear @CrimeaRiver what's the capacity on that thing? I mean, I've seen them inexpensive dehydrators, and I'm sure they work just fine (because it's not like you can screw up fanning hot air through a bunch of grills) but they always seemed real small to me....

Tomatoes also can up well, either whole (but peeled), diced, stewed, or processed into tomato juice or cooked down into sauce (plain, ketchup, or smokey barbeque, for examples).Cukes obviously make great pickles, they're one of my favorite dippy veggies (I save all my carbs for beer, so no traditional chips for me), and, surprisingly, they also dehydrate well. tbc

       @Mummabear @ThatCrazyDude @CrimeaRiver Slice them at uniform thinness (I use a mandolin), sprinkle with seasoning of choice, and process either in a dehydrator or your oven (but be careful with the oven! They will require attention.) Lastly, you can flash-freeze cuke slices, put them in a baggie, and use them to infuse water. The texture is gross to eat, but they still flavor water just fine.Bon appitit!

       @Mummabear cucumbers make good green gazpacho. Also you can make cucumber water from the seedy cores. Japanese cucumber salad is simple and tasty. I make salsa from green tomatoes, but if you want to emulate the southern US, you can bread and fry them, it’s delicious.

       @Mummabear @ThatCrazyDude @CrimeaRiver Oh, wait, I forgot a couple...a whole cuke, sliced lengthwise and seeded makes a nice keto substitute for bread on a submarine "sandwich", filled with sliced meats and cheeses. And I forgot to mention salsa, which can include both diced tom and cuke. Serve with chips (or baked cheese crisps if you watch carbs).Dang, now I'm craving cucumbers and tomatoes!
